Makes 2½ cups

Tuna is another mainstay of my diet! The new pouches of tuna have a fresh taste and are so much more flavorful than the canned variety; give them a try. Since they are packed without the addition of water, I add a little chicken broth or water for a moister consistency.

Two 6-ounce pouches albacore tuna

2 tablespoons reduced-fat mayonnaise

Juice of 1 lemon, about 2 tablespoons

2 tablespoons drained and finely chopped roasted red peppers

10 Kalamata or oil-cured olives, pitted and finely chopped (see Note)

2 tablespoons finely minced red onion

Kosher salt and freshly ground black pepper

Empty the tuna into a small bowl and mash with a fork until very finely flaked. Add the mayonnaise, lemon juice, roasted peppers, olives, and onion and stir to combine, adding a little water or chicken broth to further moisten. Add salt and pepper to taste.
